Vegan Rainbow Tofu Spring Rolls

Will make 6-8 rolls

  • 1 Beet
  • 1 Large Carrot
  • 2 Avocados
  • 1 Lemon
  • 1 Bag of Brown Rice Rice Wraps
  • 1 Block of Firm Tofu
  • 1 Container Grape Tomato
  • 1 Small Bag of Sprouts
  • Powdered Peanut Butter
  • Vegan Chili Powder

  • Powdered Peanut Butter: Just Great Stuff
  • Brown Rice Spring Roll Wrapper: Happy Pho
  • Chili Mild Low Sodium Seasoning Mix: McCormick

Cut tofu into thin slices and sear in a pan with lemon, pepper and sea salt. Shred carrots and beets and place into bowl. Cut avocados into thin slices. Mix powdered peanut butter and slowly ad chili powder and water to your liking.  Lay out other ingredients for easy gabbing, avocado, sprouts and tomatoes. Dip brown rice wrap into warm water until it gets a little soft, lay out and add your ingredients. TIP: only dip until it softens, not until it is mushy. If you leave it with some form it will be easer to roll and it won’t rip. Add all ingredients to your liking. I added bit of the peanut sauce inside as well as dipping it 🙂
